SPOKANE, Wash. — A new food cart is bringing an authentic taste of Cuba to the streets of Spokane.
Rosita’s Cubanos is now open three days a week at a few different locations in town.
Started by Jeremy Abraham, the venture is named after his grandmother, Rosita, who fled Cuba and emigrated to the U.S.
The Cuban sandwich features marinated pork, pickles and cheese on pressed bread. Abraham wouldn’t share the pork recipe saying it was a family secret.
“They took with them their traditions and their customs and they brought them here to the United States. And now they’re sharing it with the rest of us,” said Abraham. “And I just want to share her recipe with everyone else. This is her gift to me, and it’s going to be my gift to the community in Spokane.”
Rosita’s Cubanos is currently open Tuesdays at Solnix, Thursdays at Cinder on N. Division, and Saturdays at Bellwether Brewing.
Rosita’s will also be having for a pop-up at Cochinito Taqueria in downtown Spokane Saturday, February 22 from 11 a.m. to 3 p.m.
